Well, are you already in Easter holiday mode? We’re pretty busy this year and that’s why we only have very simple Easter ideas. I actually made the rabbit biscuits as a decoration for my eggnog tiramisu and then simply used the rest.
Bunny biscuits with eggnog cream filling – super easy last minute idea for Easter
Our last minute idea is really kneaded and stirred in no time. For the filling I simply used the eggnog spread with white chocolate that I have already shown you here on the blog. If you make double the amount of the eggnog chocolate spread, then you also have a small gift or a highlight for the Easter brunch!
Bunny biscuits with eggnog cream filling – that’s what you need
For the cookies
- 300 grams of flour
- 200 Gramm Margarine
- 100 grams of powdered sugar
- 1 sachet of vanilla sugar
- 1 pinch of salt
For the eggnog chocolate spread
- 250 grams of white chocolate
- 50 grams of sweetened condensed milk
- 70 grams of eggnog
- 50 Gramm Butter
That’s how it’s done – rabbit biscuits with eggnog cream filling
For the biscuits, simply knead all the ingredients into a homogeneous dough and let it rest for a while. Best chilled in the fridge for at least 30 minutes. Then you can roll it out thinly and cut out rabbits. These have to be in the oven preheated to 180 degrees for about 10 minutes, then they are already done. Let them cool down before the next step.
You can prepare the eggnog chocolate cream while the dough is resting. All you have to do is melt all the ingredients listed in a water bed and stir thoroughly. Then it is best to fill the mass into sterile glasses.
When the cream has set and the rabbit biscuits have cooled down, you can spread cream on one biscuit and put a second biscuit on top. That’s it!
