My favorite recipe for carrot cake comes with a few tricks so that the cake ends up being extra juicy: freshly grated carrots and some freshly squeezed orange juice! The most delicious topping for carrot cake – cream cheese frosting with white chocolate
I combined one of my all-time favorite creams with the juicy carrot cake: a cream cheese frosting with white chocolate. If, like me, you’re not a fan of buttercream and just don’t like frostings with butter and powdered sugar, then just try the combination of cream cheese and white chocolate. The sweetness of the chocolate is completely sufficient for the frosting and depending on the ratio it becomes really nice and solid and therefore easy to use.
Which spice for the carrot cake? – Gingerbread spice for moist carrot cake
Gingerbread spice immediately brings to mind Christmas baking, but pssst – I use it all year round Gingerbread spice for my carrot cake. I use my own spice mix, but you can also easily use the ready-made spice from the store. In combination with carrots and walnuts it always tastes delicious and not at all like Christmas. Alternatively, you can also season with cinnamon and nutmeg.

I used two small heart baking tins for the carrot cake, but you can also use a 20mm springform pan.
For the dough
- 90 grams grated carrots (the weight of the finished grated carrots counts here)
- 50 milliliters of freshly squeezed orange juice
- 65 Gramm Butter
- 65 brown sugar
- 2 Owner
- 50 grams of walnuts
- 65 grams of flour
- 1 teaspoon baking powder
- 1/2 teaspoon gingerbread spice
For the cream cheese frosting
- 220 grams of cream cheese
- 100 grams of white chocolate
For Easter cake decorations
Tip: You only need a small part of the Super Drip for this recipe and you can simply let it solidify again after use and save the rest for other cakes.

Juicy carrot cake with nuts – prepare carrot cake dough and bake
To make the dough, first grate carrots until you reach 90 grams. Add 50 milliliters of freshly squeezed orange juice. Then mix the butter well with the brown sugar in another mixing bowl. Add the two eggs one at a time and stir them in. Roughly chop the walnuts and add them and finally stir in the flour, baking powder and gingerbread spice.
Put the dough in the prepared springform pans and bake it for about 30 minutes at 180 degrees in the preheated oven (top and bottom heat). Depending on the juiciness of the carrots, the cooking time can vary slightly, so test it with a chopstick or feel with your fingertips how wobbly the cake still feels. To ensure it stays juicy, it shouldn’t be baked for too long!
After baking, let the carrot cake cool completely before making the frosting.
Prepare cream cheese frosting
The cream cheese frosting for the carrot cake is one of the easiest creams ever. To do this, melt the white chocolate over a water bath and in the meantime stir the cream cheese until creamy. Then pour the melted chocolate into the cream cheese while stirring and immediately whip the cream thoroughly. You can then use them directly. Be careful, it will solidify quickly in the refrigerator.
Easy and quick Easter cake – decorate carrot cake for Easter
For the eastern decoration, I stacked both heart cakes with a thin layer of cream cheese cream in between and then first spread them with a very thin layer of cream cheese cream to catch the crumbs. If the first layer sets a little, you can coat the cake completely again. Then it’s best to let it solidify a little in the fridge.
For the Easter decorations, I heated the Super Drip in a water bath and spread it on the cake. If the cake is well cooled, the dripping will stop by itself when you place it on the edge. I attached the little chocolate bunny and the crunchy balls with a little drip. Finally, I decorated with a few mini daffodils.
