Ingredients

  • 4 cups of sweet corn kernels (elote)
  • 2 tablespoons butter or vegetable oil
  • 1/2 teaspoon salt
  • 1/4 cup sour cream or Mexican cream
  • 1/4 cup mayonnaise
  • 1 cup of crumbled fresh cheese
  • 1 teaspoon chili powder (adjust to taste)
  • Juice of 1 lemon

How to make Mexicanskites step by step

  1. Boil the corn kernels in water with a little salt for about 5-7 minutes until they are tender. Drain and reserve.
  2. In a frying pan, melt the butter or heat the oil over medium heat. Add the cooked corn kernels and sautƩ for a few minutes until lightly browned.
  3. In a small bowl, mix the sour or Mexican cream with the mayonnaise and lemon juice.
