- 400 ml coconut milk
- 500g protein (chicken, shrimp, tofu, etc.), cut into pieces
- 1 red bell pepper, cut into strips
- 1 Thai eggplant, diced
- 1 carrot, sliced
- 400 gr bamboo shoots, drained
- 2 teaspoons fish sauce
- 1 teaspoon palm sugar (or brown sugar)
- Thai basil leaves and fresh cilantro for garnish
- Lime juice to taste
