Today I have another super delicious basic recipe for sheet cakes for you: blackberry slices with quark and sprinkles! This time I added a few blueberries, but the delicious quark slices can also be varied with other berries.

Blackberry slices with quark and sprinkles – simple sheet cake recipes

I like to bake this cake when I need a recipe that is super quick to make and makes a lot of people happy at the same time. The dough for the base and the sprinkles is the same, so you save one step and the sheet cake is in the oven in no time. In this recipe, the mixture of the almost cheesecake-like quark cream in combination with the sour-sweet blackberries is the star – the base is quite thin and the sprinkles are not that present either. If you are looking for a cake with a lot of sprinkles, you can also use the entire dough for the base and add some more crunchy sprinkles (e.g. with nuts and oat flakes). For now, here’s the quick basic recipe!

Ingredients: Blackberry slices with quark and sprinkles – this is what you need for the quick sheet cake

For the base and the sprinkles

  • 250 Gramm Butter
  • 250 grams of sugar
  • Some vanilla extract
  • 1 No
  • 1 pinch of salt
  • 500 grams of flour
  • 1 sachet of baking powder

For the curd cream

  • 1 kilo of low-fat quark
  • 1 bag of vanilla pudding powder for cooking
  • 200 grams of sugar
  • 1 No
  • 20 milliliters of lemon juice

Besides that

  • 600 grams of blackberries
  • 300 grams of blueberries

Tip: When it comes to blackberries and blueberries, you don’t have to pay attention to every gram – just make sure the cake is well topped.

Step 1 Prepare the base and sprinkles

Preheat the oven to 170 degrees top and bottom heat and grease a baking tray. Melt the butter and let it cool back to room temperature. Then knead it with all the other ingredients for the base and the sprinkles to form a crumbly dough. Don’t knead for too long! Then use about three quarters of the dough for the base by pressing it onto the baking tray and set the rest aside for the sprinkles.

Step 2 Mix the curd cream

To make the curd mixture, simply mix all the ingredients together thoroughly. Then spread it on the prepared floor.

Step 3 Cover and bake the sheet cake

Now you can spread blackberries and blueberries on the quark cream and then sprinkle everything with the sprinkles. Put it in the oven for about 35-40 minutes. Let the cake cool before cutting.
