Ingredients

  • 2 cups white rice (preferably short grain)
  • 250 g of pork (ribs or cracklings)
  • 2 Colombian chorizos, cut into slices
  • 50 g bacon
  • 4 cups of water or broth
  • 2 tablespoons finely chopped fresh cilantro
  • Vegetable oil for cooking
  • 1 teaspoon cumin
  • 1 teaspoon full seasoning (optional)
  • 1 fried ripe banana (optional)
  • 50 g sweet corn
  • 1 chopped red pepper
  • 1 chopped green pepper
  • 1 finely chopped tomato
  • 2 slices of chopped long onion

Ingredients for the Sauce (Hogao):

  • 2 medium tomatoes, chopped into small cubes
  • 1 large white onion, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

How to make paisa rice step by step

  1. Wash the rice well until the water runs clear to remove excess starch.
  2. In a large pot, heat a little oil, add the pork and cook for a few minutes. Add the chorizos and bacon and cook until golden brown. Remove excess fat if necessary.

  6. Add the seasoning and cumin to the rice during the last few minutes of cooking, adjusting to taste.
  7. When the rice is ready, serve the ingredients in layers on individual plates. Placing pieces of fried ripe plantain on one side and decorating with fresh cilantro on top.
