- 4 eggs
- 4 corn tortillas from the day before but in good condition
- ½ cup vegetable oil
- 1 chile habanero
- ½ medium red onion
- ½ cup refried black beans
- 2 medium tomatoes diced
- ½ cup of cooked green peas
- ½ cup of crumbled fresh cheese
- 4 slices of diced cooked ham
- 1 fried plantain sliced diagonally

How to make motuleno eggs step by step
- Heat a teaspoon of oil in a skillet over medium/high heat. Add the finely chopped onion and the whole habanero pepper. Sauté until the onion becomes transparent.
