This year the time had come for us too: We now have a school child in the house! For school enrollment there was simply a small buffet of our favorite cakes and these mini School enrollment cake in an ice cream cone. They look super good, but are made in no time. The recipe is designed in such a way that you can get 16 small ice cream cone cakes and 9 large muffins with one portion, thus saving a lot of time when baking. And also – the most important thing – the result is super chocolaty and delicious!

If you’ve been reading here for a long time, then you may have seen this recipe look something like this before. I made the cakes in ice cream molds a few years ago. Back then as a tribute to one of my favorite holiday snacks: Soft ice cream with colorful sprinkles. The recipe combines chocolate cake with a delicious chocolate mousse. So that I can enjoy the enrollment day myself, and don’t stand in the kitchen for long I simply replaced the mass with my favorite topping made of white chocolate and cream cheese. Add the colorful sprinkles – done!

I’ll link the crumble mix with the letters to the ingredients. You can simply dip the finished ice cream cones into the mix and they will look good. I just sprinkled some sprinkles on top of the muffins. And if you have a minute or two extra time, you can look for the right letters and still little ABCs sit on the tarts – or just the Name of the proud schoolchild.

For the dough

  • 100 Gramm Margarine
  • 125 grams of sugar
  • 2 Owner
  • 250 grams of flour
  • 1 1/2 teaspoons baking soda
  • 4 1/2 tablespoons baking cocoa
  • maybe some chopped chocolate
  • milk as needed

For the topping

  • 300 grams of cream cheese
  • 200 grams of white chocolate
  • Streuselmix – I used the Streuselmix I-Dötzchen from Superstreusel. Since this is currently sold out, I have linked you to alternatives, you can find them in the recommendations.

Besides that

  • 16 small sundae cases
  • Paper muffin tins

Step 1 Prepare and bake the dough

The dough is very easy to make. Mix together the margarine and sugar and then stir in the eggs. Add the dry ingredients and then mix in milk little by little until the dough is nice and creamy. Then divide the batter into the sundaes. To do this, simply place them all on a baking sheet. Make sure they are only about two-thirds full. Then you bake them for about 15 minutes in a 180 degree oven with top and bottom heat. Fill the rest of the batter into muffin cups in a muffin tin. These have to be in the oven for about 20 minutes. Then let everything cool down.

Step 2 Prepare and decorate the topping

The topping consists of only two ingredients and is ready in no time. Melt the white chocolate in a water bath (careful not to let it get too hot!) and in the meantime stir the cream cheese in a bowl until creamy. Then quickly add the melted chocolate until a homogeneous mass is formed. I then simply spread the topping over the cakes with a spoon. It is also suitable for spraying it on nicely in a piping bag. You should cool it down a little beforehand. I then simply dipped the sundae upside down into the sprinkles and then sprinkled some sprinkles on the muffins. Finally, I embellished individual ice cream cones and muffins with ABCs.
