Preparation time: 4 hours
- 2 cups of pinto or bay beans (previously soaked)
- 150 gr of chorizo
- 100 g of bacon
- 1 large onion
- 2 jalapeno or serrano chiles
- 2 medium tomatoes
- 3 garlic cloves
- 1 sprig of epazote
- Salt to taste
- Vegetable oil
How to make charro beans
- In a large pot, cook the beans in enough water to cover them until tender. This may take 1 to 2 hours.
- In a separate skillet, cook the bacon until golden and crispy. Then, remove and reserve. In the same pan, cook the chorizo. Then, remove and reserve.
- Add a little oil and sauté the chopped onion, chillies and garlic until golden brown. Add the chopped tomatoes and cook for a few minutes until they soften.
- Add the onion, chili, garlic and tomato mixture to the bean pot. Mingle. Add the cooked chorizo and bacon.
